Quick and Delicious: Asian Meatballs on Rice for Busy Moms

Introduction:

If your weeknights are anything like ours then a quick meal that the whole family will enjoy is just what you need! My girls love this meal so much, you know how rare that is with kiddos ha! Another reason this recipe is in my top 5’s is because you can make the meatballs ahead of time and freeze to make meal prep even easier. You’ll just need to make sure you don’t put the sauce on until after you take them out and warm them up. Try this recipe out and let me know what you think!

Ingredients:

For the Meatballs:

  • 1 pound ground meat (we use ground turkey)

  • 1/2 cup breadcrumbs

  • 1/4 cup chopped green onions

  • 1/4 cup soy sauce

  • 2 cloves garlic, minced

  • 1 egg

  • 1 teaspoon ginger, minced

  • 1/2 teaspoon black pepper

For the Sauce:

  • 1/4 cup soy sauce

  • 2 tablespoons honey

  • 2 tablespoons rice vinegar

  • 1 tablespoon sesame oil

  • 1 teaspoon cornstarch (to thicken)

  • Sesame seeds for garnish

For Serving:

  • 4 cups cooked white or brown rice

  • Steamed broccoli or your choice of vegetables

Instructions:

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.

  • In a large mixing bowl, combine all the meatball ingredients: ground meat, breadcrumbs, green onions, soy sauce, garlic, egg, ginger, and black pepper. Mix until well combined.

  • Shape the mixture into small meatballs, approximately 1 to 1.5 inches, and place them on the prepared baking sheet. This should make about 20-24 meatballs.

  • Bake the meatballs for about 15-20 minutes, or until they are cooked through and browned. Turn over when cooked halfway.

  • While the meatballs are baking, you can prepare the sauce. In a small saucepan, combine soy sauce, honey, rice vinegar, and sesame oil. Heat the mixture over low to medium heat.

  • In a separate small bowl, mix the cornstarch with a little water to create a slurry. Gradually add the slurry to the sauce while whisking continuously. This will thicken the sauce.

  • Once the meatballs are ready, remove them from the oven and gently toss them in the prepared sauce to coat them evenly.

  • Serve your Asian meatballs over a bed of steamed rice, with a side of vegetables (we love it with broccoli). I like to toss the vegetables in the sauce so all the flavors mesh well. Garnish with additional green onions or sesame seeds if desired. My husband and I like topping with sriracha.
